Ingredients:
25 equal size cubes each of watermelon, white jack cheese, yellow cheddar, smoked turkey and summer sausage.
1 cup ranch dressing.

Method:

  • Build a Rubik’s-style cube by methodically alternating cubes, making a 5 cube x 5 cube layer on the bottom.  Build four more layers on top forming a tight cube.  Serve with the ranch dressing.

bcwtp (bacon, cheese, watermelon, tomato and pesto sandwich)

Ingredients:
2 thick slices bread of choice, toasted
2 tablespoons pesto sauce
2 slices cheddar cheese
1 thick slice seedless watermelon - same size as the bread
2 thin slices tomato
4 slices cooked crisp bacon
2 butter lettuce leaves

Method:

  • Spread the pesto over 1 side of each slice of toast.
  • On one slice of toast stack the cheese, watermelon, tomato, bacon and lettuce on top of pesto.
  • Place the other slice of toast, pesto side down, on top of the lettuce.
  • Cut in half and enjoy.

grilled, spicy watermelon

Ingredients:
Watermelon wedges
1 x pinch garlic
1 x tsp chilli sauce
Cilantro

Method:

  • Transform watermelon from sweet to savoury with this mouth watering Thai-inspired sauce.
  • Watermelon wedges are grilled until caramelized, drizzled with garlic chili sauce and garnished with cilantro. Serve as a side dish along with ribs, chicken or shrimp.
  • Cut watermelon into 1-inch (2.5 cm) thick wedges. Lightly drizzle each side with remaining honey and place on grill. Grill until just browned, about 2 minutes per side. Place watermelon slices on a plate and drizzle with lime dressing. Garnish with cilantro.

Caribbean Salsa

Ingredients:
2 cups chopped seeded watermelon
1 cup chopped fresh pineapple
1 cup chopped onion
¼ cup chopped fresh cilantro
¼ cup orange juice
1 tablespoon chopped jalapeno pepper or jerk seasoning (or to taste)

Method:

  • In a large bowl combine ingredients; mix well. Refrigerate, cover at least 1 hour to blend flavors.
  • Stir before serving.

Dilled Baby Shrimp & Watermelon Napoleons

Ingredients:
2 cups cooked baby salad shrimp
2/3 cup mayonnaise
1 tablespoon fresh snipped dill
12 4 inch seeded rounds of watermelon about ½ inch thick
4 large cocktail shrimp
4 sprigs of dill

Method:

  • Mix together the shrimp, mayonnaise and dill. Chill until ready to serve.
  • To serve, place a round of the watermelon on a serving plate and top with a thin layer of the shrimp salad.
  • Top that with another round of the watermelon and then another layer of the shrimp salad.
  • Top that with another watermelon round. Place a cocktail shrimp on top with a sprig of dill.
  • Repeat to create 4 Napoleons.

Grapefruit Fiesta

Ingredients:
2 tablespoons frozen pink grapefruit juice concentrate (1 ounce)
2 cups cubed watermelon
Dash of hot pepper sauce

Method:

  • Place grapefruit juice concentrate, watermelon and pepper sauce in container of electric blender.
  • Cover and blend until pureed.
  • Pour into glass and serve.
  • For a slushy drink: Freeze 1 cup of the cubed watermelon. Blend grapefruit juice concentrate and remaining 1 cup cubed watermelon until pureed. Add frozen cubed watermelon; pulse until mixture is slushy.
  • Serve immediately.
